Aloo Lachha Paratha  Recipe is a tasty and flaky Indian flatbread stuffed with spicy mashed potatoes. Here’s how to make it:

Components:

Regarding the dough: Two cups of wheat flour Half a teaspoon of salt As needed, water (for kneading) Ghee or oil: 1 tablespoon

Regarding the Filling:

Three medium boiled potatoes, mashed Two green chilies, chopped finely One teaspoon of grated ginger Two tablespoons of finely chopped coriander leaves 1/2 tsp red chili powder 1/4 teaspoon of powdered turmeric Powdered cumin: 1/2 teaspoon Garam masala: half a teaspoon 1/2 tsp dry mango powder (amchur) (optional) Add salt to taste. Regarding Cooking and Rolling: Oil or ghee: as required Wheat flour: for dusting

Directions:

1. Get the dough ready:

1. Put the oil, salt, and wehate flour in a mixing bowl. Add water little by little and knead until the dough is soft and flexible. Let it rest for 20 to 30 minutes after covering it with a moist cloth.

2. Prepare the filling.

1. Combine all the spices, ginger, coriander, green chilies, and mashed potatoes in a bowl. Taste and adjust the salt and spices. Put aside.

3. The Paratha is rolled:

1. Roll the dough into tiny discs after dividing it into balls of uniform size.

2. In the middle of a disk, put some of the potato filling.

3. To create a stuffed dough ball and seal the filling, gather the edges.

4. Roll it into a 6–8 inch circle after lightly flattening it.

4. Construct the Flaky Layers, or Lachha:

1. Apply ghee to the paratha after it has been rolled out.

2. Fold it into pleats like a fan.

3. Flatten the pleated strip after rolling it into a spiral.

4. Make sure the layers are still visible by rolling it out once more into a thin paratha.

5. Get the paratha ready:

1. Place a skillet or tawa over medium heat.

2. After placing the paratha on the heated tawa, fry it for one to two minutes, or until bubbles start to form.

3. Turn over, drizzle with ghee, and heat until golden spots appear. Continue with the opposite side.

4. Use a spatula to gently press to guarantee equal cooking.
