Chinese Shrimp Spring Roll Recipe

Components:
Regarding the filling:
One cup of coarsely chopped, peeled, and deveined shrimp One cup of cabbage shreds Half a cup of carrots, shredded 1/4 cup of green onions, cut finely Two minced garlic cloves One spoonful of soy sauce One teaspoon of sesame oil Half a teaspoon of grated ginger To taste, add salt and pepper.
To wrap: Ten to twelve spring roll wrappers One beaten egg or a slurry of cornstarch (one tablespoon cornstarch combined with two tablespoons water)
To fry: Oil made from vegetables (for deep frying)
Directions:
1. Get the filling ready: In a pan, heat a small amount of oil over medium heat. Ginger and garlic should be sautéed until aromatic. Cook the shrimp for two to three minutes, or until they turn pink. Add the green onions, carrots, and cabbage and stir. Cook until softened, 2 to 3 more minutes. Season with salt, pepper, sesame oil, and soy sauce. Stir thoroughly and allow to cool fully.
2. Cover the rolls with springs: Place a spring roll wrapper in the shape of a diamond on a level surface. Put one or two teaspoons of the filling in the wrapper’s lower corner . Fold the sides in after folding the bottom corner over the filling. Tightly roll it up toward the top. Use the cornstarch slurry or beaten egg to seal the edge.
3. Deep-fry the spring rolls: Heat vegetable oil to 350°F (175°C) in a wok or deep pan. The spring rolls should be fried in batches for 3–4 minutes, rotating occasionally, until golden brown. Take off and pat dry with paper towels.
