Dennis Prescott’s Lobster Thermidor, live lobsters are cooked, a rich, creamy sauce is made, and the mixture is baked inside the lobster shells for a delectable and decadent seafood feast:

Components:

1. Lobsters: 2 live lobsters weighing approximately 1¼ pounds apiece.

2. Base of Milk:

  • One and a half cups of whole milk

3. Ingredients for the Sauce:

Approach:

1. Get the lobsters ready: Remove the meat from the lobsters once they have cooled in an ice bath after boiling. To serve, set aside the shells.

3. Prepare the sauce: In butter, sauté shallots and garlic until aromatic. To make a roux, add flour. Slowly pour in the flavored milk after deglazing with white wine and brandy. Add half the cheese, cream, tarragon, chives, mustard, lemon zest, and whisk. Season with salt and pepper. Add the lobster meat and stir.

4. Put Together and Bake: Spoon the mixture into the prepared lobster shells on a baking tray. Add the remaining cheese on top, then bake at 400°F until bubbling and brown.
