Ingredients:

To marinate the chicken:

  • combine 1 kg of chopped chicken
  • 1 cup of yogurt
  • 2 tablespoons of ginger-garlic paste
  • 2 teaspoons of red chili powder
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of garam masala
  • 1 teaspoon of salt, and
  • 2 tablespoons of lemon juice.

Regarding the rice:

  • 3 cups of basmati rice, soaking for
  • half an hour Six cups of water
  • Two bay leaves
  • Four to five cloves
  • Three to four green cardamoms
  • One black cardamom
  • One-inch cinnamon stick
  • One teaspoon of salt

For the Biryani Masala:

  • 3 large onions (thinly sliced)
  • 2-3 green chilies (slit)
  • ½ cup cooking oil or ghee
  • 1 tbsp cumin seeds
  • 1 tbsp coriander powder
  • ½ tsp black pepper powder
  • 1 tsp garam masala
  • ½ cup chopped coriander leaves
  • ½ cup chopped mint leaves
  • 1 pinch saffron (soaked in 2 tbsp warm milk) or ½ tsp yellow food color

Instructions:

Step 1: marinade the Chicken

1. Combine the chicken, yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, salt, and lemon juice in a bowl.

2. Let the chicken marinade for at least an hour, preferably overnight for a more flavorful result.

Step 2: Get the rice ready.

1. Add the bay leaves, cloves, cardamoms, cinnamon, and salt to 6 cups of boiling water.

2. Cook until 70% done (the rice should still be bite-sized) after adding the soaked rice.

3. Empty and reserve.

Step 3: Prepare the Masala Chicken.

1. Sliced onions should be fried in hot oil until golden brown. Remove half for garnish.

2. Add cumin seeds and green chilies, then sauté.

3. Add chopped tomatoes, coriander powder, black pepper, and salt. Cook until tomatoes soften.

4. Add marinated chicken and simmer for 10-15 minutes until the oil separates.

5. Include half of the chopped mint leaves and coriander.

Step 4: Layer the biryani in .

1. Spread half of the cooked rice in a big pot.

2. Evenly distribute the chicken masala.

3. Add the remaining rice, saffron milk or food coloring, fried onions, coriander, and mint on top.

4. For 15 to 20 minutes, cover and steam (dum) over low heat.
